My father L-O-V-E-S Enteman's Coffee Cake. However, when he came for a visit, I couldn't find it in the stores. SO, here's a recipe that tastes just like it...even a little bit more moist:
CRUMB INGREDIENTS:
1/3 cup white sugar
1/3 cup brown sugar
1/8 teaspoon salt
1 teaspoon cinnamon
7 tablespoons butter - melted
1 3/4 cups cake flour
Combine sugars, salt and cinnamon. Stir in the butter until smooth. Stir in cake flour until mixed.
CAKE INGREDIENTS
5 tablespoons butter - room temperature
1 1/4 cups cake flour
1/2 cup white sugar
1/8 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons vanilla
1/3 cup buttermilk
1 egg & 1 egg yolk
Powdered sugar for garnishment
1- Preheat the oven to 325 degrees
2- Prepare a 8x8 or 9x9 square pan with parchment paper and cooking spray
3- In a mixer, combine the flour, salt, sugar and baking soda. Add in butter 1 table spoon at a time while on LOW speed. Mix in the vanilla, buttermilk and eggs. Beat on medium until smooth. Pour mix into pan and spread evenly with a spatula.
4- Take crumb mix and place on top starting in corners and work into the middle (make little balls or "crumbs")
5- Bake for 35 minutes
