A great way to get kids to eat some vegetables without the hassle (or them knowing it; unless you tell them) or, if you just want a sweet treat to eat anytime, try this recipe.

- 3 cups of flour
- 1 1/2 tsp cinnamon
- 1 tsp baking soda
- 1 cup sugar
- 2 tbsp vanilla extract
- 1/4 tsp baking powder
- 1 tsp salt
- 3 eggs
- 1 cup vegetable oil
- 2 cups grated fresh zucchini
- Preheat oven to 350 and grease loaf pan(s) on bottom and sides
- Combine all ingredients in a large mixing bowl with a wooden spoon.
- Place mixture into loaf pan(s), about 1/2 -3/4 full each, and bake in the oven for 80-90 minutes. After 80 minutes, I suggest checking if they are done by placing either a knife or toothpick into the center. If it comes out clean, it is done. If not, continue baking and checking every 5 minutes until center comes out clean.
- Remove from oven and cool in pan on a wire cooling rack.
